Industrial and Environmental Chemist.
1st woman to be admitted to MIT in 1868.
Her interests :
applying scientific principles to domestic situations, such as nutrition, clothing, physical fitness, sanitation, and efficient home management, creating the field of home economics.

Food Materials and their Adulterations (1886), Conservation by Sanitation, The Chemistry of Cooking and Cleaning, The Cost of Living (1899), The Cost of Food, and Euthenics, the Science of Controllable Environment (1910).
